About the Cookbook
After years of anticipation, The Peached Tortilla: Modern Asian Comfort Food from Tokyo to Texas, is set to release May 7, 2019. Chef/Owner Eric Silverstein tells the story of his journey from ex-lawyer to food truck owner and eventually multi-restaurant operator. The cookbook, which is part memoir, includes one hundred recipes that span the early food truck days all the way to the first brick and mortar restaurant on Burnet Rd. Eric describes his early food influences while living in Tokyo, Japan and growing up in a multi-racial household. As Eric's journey ebbs and flows, so do the recipes in the book as they follow him through the birth of his first food truck all the way to his brick and mortar restaurant. The cookbook is a true passion project that tells his journey of inspiration and love of food.
